BananaApple Muffins (Banana Muffins with Banana-Apple Jam Filling)

BananApple-Filled Banana Muffins 
I have been baking banana muffins a lot but never made a post about it, mainly because such recipes abound on the net, that an additional one from me that I based on simplyrecipes will just add to the net clutter. However, after I made BananApple Jam, I thought I'd marry the two just for fun. So I baked this just before I left for work today.

3  ripe bananas, mashed
1/3 cup melted butter
3/4  cup sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
BananApple Jam (I put 1 tsp to each muffin cup)
sparkling sugar for sprinkling on top (optional)

Preheat the oven to 500°F (175°C). Line 12-cup muffin tin with cupcake liners. Beat butter into the mashed bananas in a large mixing bowl. Add the sugar, egg, and vanilla, and beat to blend. Sprinkle the baking soda and salt over the mixture and beat in. Add the flour last, beat just until moistened. Fill muffin cups up to 3/4. Add 1 tsp bananapple jam at the middle and top with more batter up to the brim of the muffin cups. Sprinkle with sparkling sugar on top. Place in the oven, close the door and immediately bring the temp down to 350ºF. Bake 15-20 minutes. Remove immediately from pan and cool on a rack.
