Ube Cream Cheese Filling

I am making a separate post for this because I used this not only for my (failed) ube cake attempt, but also because it made my basic ube haleya very yummy. So I figured it has earned itself a separate post. Also, I am still gonna experiment again with ube cake, which will have its separate post once I have found a satisfactory recipe for it (and I will try not to deviate too much from those recipes available online).

Ingredients:
8-oz cream cheese, softened
1 stick butter, softened
1-2 cups confectioner's sugar
1/2 cup ube haleya
1 tsp pandan essence (clear-colored)
10-15 (or more) drops of purple coloring [optional - you might like the contrast of colors]

Method:

Very easy. Blend well all ingredients. Add food coloring as desired, then beat some more. Use as filling for your ube roll (can also be used as frosting, but this is very sticky if you will wrap in cling wrap and put in the fridge. Better to use buttercream frosting for the purpose as it does not cling to plastic after refrigeration).

  2. hi manang, i searched for the ube roll recipe, i couldn't find it, by any chance u post it on other website or got it from other site? i would like to make a jelly roll/somewhat like ube roll or pianono but i dont know how to make the dough for cake roll... can i request for the recipe? thanks ng marami.

  4. I have been looking for a good ube cake and could not find one. Do you have a recipe for that? I always google it but ube pandan or ube pandan macapuno always comes up and It's really hard for me to get pandan around here so I'm just looking for the ube cake,

  6. manang, is there any substitute for pandan essence, i dont like pandan kc... or would it affect the flavor if i dont include the pandan? ty.

    you can definitely omit the pandan. If you want, just use plain vanilla.

    I do have it: ube cake roll but be warned that it is nothing like goldilocks or red ribbon. Very good per my palate nonetheless. :)

    1 stick butter is 1/2 cup, or 8 tbsp, or 1/4 lb (or 4 oz)

    That's the spirit! Try and try until you succeed. Just try to review what you did and try to troubleshoot...see where you went wrong.
    The recipe above for filling is the same one I used for frosting.

  17. Anonymous, Yes you can use the powder. Prepare it as halaya first before using in this recipe. I have used ube powder to make halaya before, and while I did not like it as halaya, it was ok once mixed with cake batter (for this) or with vanilla ice cream (for ube ice cream).

    As long as you prepare the ube powder first as halaya, then proceed to get the 2/3 cup to use for this recipe. You can then use the rest of your ube halaya as plain dessert.

    I probably would if I had an ube flavored MCCormick essence/extract. Pandan was all I had at the time, and I figured I'd use it since they go very well together anyway.

      Today is 10/13/2012, 8:46 am and I just got back from work. Your comment made me laugh. Someone misses me! Haha! I have been on fb from time to time. I have a draft about apples, but I haven't had the time to make a post yet. I have to upload photos on those. Other than that, I really got no new recipes because I got into a diet mode (I lost about 13 pounds already since June, and I am just trying to maintain my slow weight loss until I reach 120 lbs and still not get hungry). Thanks for your comment! :) Will try to post next week, but I gotta clean up the house first :)
