Not sure why cheesecloth, but there was no problem with my lid-covered eggs. The wide-mouth jar is simply so that I could put in eggs easily (hindi masikip). You can use banga if you want (the jar is ideal for 5-6 pieces only, as I do not make them in big batches, usually 1-2 dozens lang, para I can cook after one month and have another batch processed again. Heat makes the eggshell more permeable. If you boil the eggs first, it'll only take 24 hours to soak in salted water.
